Kiwifruit Muffins


  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • Dash of salt
  • 1 egg
  • 1/2 cup whole milk
  • 2 tablespoons butter, melted
  • 2 kiwifruit, peeled and chopped
  • 1/2 cup raisins


In a large bowl, combine the dry ingredients.
In a small bowl, whisk the egg, milk and butter.
Stir milk mixture into dry ingredients until just moistened. Do not overmix.
Gently fold in kiwifruit and raisins.
Fill greased muffin pans three-quarters full.
Bake at 210°C for 15-18 minutes or until a toothpick inserted near the centre comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm.

Recipe tip:

For a different vitamin and nutrient-packed muffin, replace the raisins with blueberries.

How to ripen kiwifruit:

You can easily ripen kiwifruit by leaving it at room temperature for a few days or to speed up the process, put the kiwifruit in a dry paper bag along with an apple or banana.
