Sweet and sour kiwifruit with prawn salad

Serves: 3 to 4


  • 4 kiwifruit, peeled, sliced and chilled
  • 12 – 14 large cooked and shelled prawns, chilled
  • A small handful of fresh mint leaves

Lime Dressing:

  • 2 ½ tablespoons of freshly squeezed lime Juice
  • 1 tablespoon sugar
  • ½ teaspoon fish sauce
  • A pinch of sea salt
  • 1 tablespoon of peanut oil


In a small bowl, whisk together the lime juice, sugar, fish sauce, sea salt, and peanut oil.
Combine the kiwifruit and prawns. • Add the lime dressing and toss gently to combine. Garnish the salad with some mint leaves.
Serve immediately. Leaving the kiwifruit too long in the dressing will make it go soggy.

The freshness of the kiwifruit and the succulence of the prawns goes very well with the tanginess of the dressing. This is a perfect summer salad.

To skin or not to skin a kiwifruit:

When eating a kiwifruit raw, this is up to you. The majority of a kiwifruit’s fibre is found in its skin, so provided you have washed the kiwifruit well, there is no reason why you shouldn’t eat the pulp and the skin.
