Blueberry Muffins


  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 cup caster sugar
  • 1 egg
  • 1/4 cup oil
  • 1 1/2 cups milk
  • 1 teaspoon grated lemon rind
  • 2 teaspoons lemon juice
  • 1 1/2 cups blueberries
  • Icing sugar to dust


Preheat oven to 200°C.
Mix all ingredients together in a large bowl until just combined and moistened. Don’t over mix or the muffins will be tough and not rise evenly.
Spoon into well greased, deep muffin tins.
Bake for 15 – 18 minutes.
Cool on a wire rack and dust with to serve.

Tip for using frozen berries:

Blueberries are delicious fresh or frozen. If using frozen berries in your recipes don’t thaw them; just use them straight from the freezer. This will prevent the berries from splitting and ‘bleeding’ into the mixture. Fresh or frozen, blueberries are delicate, so make sure you fold or mix them gently into your mixture.
