Baked Avocado with creamy Crab

Preparation time: 10 minutes
Cooking time: 25 minutes
Serves 2


  • 2 avocados, halved and sprinkled with lime juice
  • 1 Tbsp of butter
  • 1 small onion, finely chopped
  • 2 Tbsp flour
  • 3 cups milk, scalded
  • Half kg lump crabmeat
  • 1 tsp prepared mustard
  • 1 Tbsp Worcestershire sauce
  • Parmesan cheese


Sauté onion in butter making sure it doesn’t brown at all.
Make roux by adding the flour and cook for 2 minutes.
Add milk, a small amount at a time, being careful not to let it lump.
Cook and stir until smooth and thick, then remove from heat.
In a separate bowl combine crab, mustard, and Worcestershire sauce.
Add the crab mixture to the white sauce.
Top the halved avocados with the crab mixture and sprinkle with parmesan cheese.
Bake at 200 degrees C for 15 minutes or until avocado is heated through.

Recipe tip:

For variety, substitute the crab with chopped prawns, crayfish or tinned tuna.

Avocado preparation tip:

Cut the avocado lengthwise around the seed, twist each half in opposite directions – a ripe avocado should separate perfectly.
